Made with estate grapes from selected vineyards. The vineyards have stony and calcareous soil and are carefully managed to produce this classic wine. Following a temperature controlled vinification in stainless steel, the wine is aged for six months in large Slovenian oak barrels and ends its cycle with a short bottle rest. The name Bajo (Bay) comes from the town’s most important street, named after the hair colour of local horses.
